Here's a real household helper ...
A recent discussion here helped me come up with an idea for a post. Maybe I'm the only one who has this problem. But somehow I doubt it
Ever have a problem coming up with what to make for dinner? I know I do. Hopefully this post will help us all out. Each day you cook, stop in here and post your menu.
Feel a little extra froggy? Feel free to post your commentary and recipes too! You don't have to include any commentary or recipes, just the menu. However, if you don't include a recipe ... don't be surprised if someone asks for it!

Fried Chicken
French Fries
Peel n Shrimp w/ Old Bay
(Okay, so the shrimp so didn't quite fit in with this meal but my family *loves* it and I found it on sale when I went to the store ... I couldn't resist! LOL)
Oh and for the fried chicke, I got this recipe from a friend of mine. I've never made a breading before I simply added some garlic salt and pan fried it. But this time I did things a little differently. She told me to dip the chicken in egg and then roll in a mixure of flour, garlic powder, salt, pepper and paprika and pan fry it. However, I made a mixture of flour, garlic salt, onion powder and paprika. I personally could have done w/out the onion powder but I definitely liked it. Everyone else *loved* it. Oh and I also pre-cooked the chicken in the microwave. I always have a hard time getting the chicken to cook clean through but this time I had no problem!

Wed- Scalloped potatoes with (leftover) ham (Crockpot), broccoli, Ambrosia salad (just mandarin oranges, pinapple chunks, cherries, and coconut mixed)
I leave at 7 am, so i don`t have much prepare time in the morning. So- I sliced the potatoes into a bowl of cold water Tuesday night while watching tv. I chopped up the leftover ham and some onions and left that in a zip lock. Then Wed am I just drained the potatoes and throw them in the crock pot, added the ham/onions, then mixxed 2 cans mushroom soup with milk and 1/4 c flour, salt and pepper, and mix all in crock pot. Turned it on low, and left my teenager a note to stir it when he got out of school.
I got home at 4:30, added 1/2 lb sharp cheese cubed to it. Then I threw the salad together (all canned ingrediants) and steamed some broccoli. It was delicious!!!

I had a change of plans in tonight`s menu. (I could have sworn I had checken breasts in the freezer! )
So- instead of chicken we are having kabobs. Quick and easy- since we have to be at the church at 6 to set up the cub scout sale.
I`ve been marinating spiedies (beef) since Sunday, so tonight I just skewer it with onions, peppers, and mushrooms and grill it. While they are cooking I`ll make a package of yellow rice, and a frozen bag of peas and carrots.
The kids ate all the ambrosia, so we`ll go with some sliced cantalope instead.
What`s everyone else having?

Okay I had to work late and we're making 50 lebanon bologna sandwiches for the kids' school tomorrow. Sounded like a pizza night to me
Directions:
Pick up cell phone.
Call pizza place.

This is a take off of a menu for moms meal. It was supposed to be baked, but I did the Rachel Ray 30 minute meal idea and skipped that step.
I had frozen chicken breast cutlets. I cooked them in on the stove top, frozen and all. I cooked ziti. When the chicken was done, I cut it into small pieces and then added one can of low sodium cream of chicken soup w/ 3/4 cup skim milk. Scraping the leftover chicken off the pan. Then I added 1/2 cup shredded cheddar and cooked it for about 10 minutes while the pasta finished. Then i added the chicken and the pasta to the pan and left it for a few minutes while my husband so nicely made a salad. We had some Italian bread too.
He loved it. It is certainly not low fat, but it was good! _________________ Rebekah Kogelschatz

Hubby is laid off again this week so I get to enjoy coming home to a cooked dinner this week! Tonight we had:
Oven Roasted Chicken
Mashed Potatoes & Gravy
Buttered Carrots
Creamed Corn
Yeah, hubby has a thing w/ making a lot of veggies, lol! I personally would have probably nixed the carrots and added some stuffing. But I'm not complaining! LOL!

Oh yummm Anita, that sounds wonderful!!!
I made homemade chicken noodle and veggie soup.
I used a box of low sodium Swanson chicken broth, added a bag of mixed veggies (corn, carrots, peas and green beans) and some cut up cooked chicken. I let that boil for about 10 minutes, then I cooked some egg noodles and added it to the pot. I let that cook for about 15 more minutes. In the meantime I made some drop biscuits in the oven.
Hubby walked in the door just as it was ready.... yummm it was good!

Green corned beef- ummmm- Sounds good-lol!
This week`s menu is:
Sunday- Zack`s choice- Lasagna, tossed salad, italian bread. (Took leftovers to work for lunch )
Monday- Grilled Lime basil chicken (Hubby`s choice- It`s a no fat salad dressing that I use as a marinade), Rice a roni (Ed chose), peas, cole slaw, orange jello with mandarin oranges (Zack chose)
Tuesday-(This is my teenager`s choice meal- and he`ll cook it)
Meatloaf (Mixed and shaped in pan tonight, teen can throw in oven when he gets home from school)), baked potatoes (Scrubbed and thrown in with meat), sour cream, corn, and baked apples.
(Baked apples that my kids love are just cored apples with light maple syrup and walnuts in the centers- baked until tender. Teen can make this after school and bake with the rest)
Wednesday- My choice! Pork loin with potatoes, carrots, onions, and parsnips, (Crockpot- just add salt and pepper and let it cook.) and spiced applesauce.
Thursday- Baked fish (me), Mac n cheese (Zack), spinach (me), fruit salad (Hubby).
Friday-Hubby`s choice- Marinated Steaks (grilled) with mushrooms and onions, baked potatoes in foil, broccoli in foil, leftover fruit salad, and a big cold glass of wine (MEEEEEE!!!!)
Saturday- I`m working, so hopefully it`s dinner out.
Anyone else have a plan?

I can never plan a week ahead. I wish I could. I just never know when the kids will or won't be home. We really plan day by day.
Last night I made fish with a garlic/lemon sauce, corn on the cob and top ramen noodles. Oh and a salad.
Tonight, only one of my daughters is home, she asked for sloppy joes. I don't make them the way most folks do.
I brown hamburger meat and then stir in bbq sauce and let it marinate. Then throw it on a bun.
I then cup up potatoes into wedges and sprinkle onion soup mix and oil on them and bake them. They are great. I'll also make a salad.
Wednesday night one daughter is not home and the other has work until 5:30, then we have a 6:30 meeting, so it's quick food Wednesday day. That's as far as I've gotten this week. _________________ Audrey

I made a meat loaf this morning (actually 4 little meatloaves in a bundt stoneware) and put it in the frig. I'll have Becca get it out when she comes home from school to let it warm up a bit, then I'll have her put it in the oven about 1/2 before I come home from work. When I get home, I'll make some mashed potatoes, corn, and biscuits.

Monday night we cooked ribs on the grill with baked potatoes and green beans and spiced applesauce.
Tuesday I cooked a turkey breast in the crockpot, made stuffing, smashed taters, cream corn and cran-orange salad.
Wednesday night was grilled chicken feta sausage w peppers and onions on whole wheat rolls with baked beans, macaroni salad (with tuna and peas in it), and fruit salad.
Tonight there is just hubby, zack and I. I think I`ll make hubby his shrimp he`s been wanting with some leftover mac salad, and stir fried chicken, broccoli, mushrooms, and asparagus over brown rice for me and Zack. (He isn`t fond of stir fry)
Tomorrow night I need to use that turkey. Maybe turkey and biscuits?? We`ll see.
