Last night we had KFC-lol. I didn`t plan anything for this week, so I am way off. I think I`ll grill tonight. I have cube steaks, baked taters in foil (Maybe wrap in bacon then stuff with chedder- yummmm), fresh melon, and...ummmm... a veggie....I think I am down to cauliflower or corn in the freezer....

Oh that sounds delicious! That's where I lack. I have a hard time just throwing things together.
Last night was the Social Studies fair (yes, social studies ... not science?) So I bought some lettuce, tomato, ham, cheese and hot dog rolls and we made "mini subs". It was just the kids and I last night so that was perfect for us.

Well, not having a menu really threw me off this week. I bought out too often, and I had to run to the store 3 times this week. On top of that- we didn`t eat that well either.
So- I am on a mission to come up with some good meals for this week that I can crock pot or easily make. There will be just 3 of us, so that opens up things a bit. (My teen eats for 2-lol- and he`ll be away)

Brussell sprouts
Oh and we've had some changes around here. Hubby is now in charge of supper Hey, it was either cook or clean afterwards ... I left HIM choose! LOL!

Last night was Chick-Fil-A before the Mercy Me concert. Oh, yeah!
Thursday I made my friend Ruth's "Italian Penicillin" :
Chicken broth (from real chickens, degreased, etc. - messy job)
Progresso Canned whole tomatoes - chop coarsely - including the juice
Frozen chopped spinach - store brand is OK - thaw and squeeze out all liquid
College Inn chicken broth
Chopped chicken meat
(optional) chicken buillion granules, to taste, if needed
and
Buitoni Cheese-filled Tortellini - boil separately in water
Basically you bring all to a boil then remove from heat, add the tortellini and either serve OR put in containers to bring to sick friends (ergo, "penicillin").
Ruth's mother-in-law is from Sicily and is quite specific about the brand-names listed, for the best Italian flavor, btw.

I saw those recipes- and was wondering if they were good. So make sure you let us know!
I was just saying the other day that I need to get back to my menus. I spend way too much when I don`t, and we end up eating out more.
Tonight is Scout night- generally a busy night- so I think I`ll pan fry some chicken tenders with veggies (I have zucchini, yellow squash, and pea pods) and spices and serve them over noodles.
Tomorrow I want meatball subs. My teen is off for summer and home, so I`ll just have them mixxed up and he can bake and throw them in sauce for me. I have some chedder potato pancakes that I`ll make and a tossed salad.
Wed- I want to cook out. I have pork loin slices that I`ll marinate in Moore`s meat marinade (I LOVE that stuff!!! Tastes just like Watkins meat magic actually... great stuff!) and then I`ll season with montreal steak seasoning and grill. Goes great with sweet potatoes in foil, warm cinnamin applesauce, and a veggie.
And that`s as far as I am going to get today.

We didn't get to the potatoes because we didn't get a chance to start dinner until much later and it says that they take over an hour. It just wasn't in the card that night but I have everything to make them so I definitely will ... they sound too good!
As for the steak ... Oh my gosh!!! It was absolutely delicious!! Even hubby loved it and he was very apprehensive of "messing with his steak". He only likes steak one way. He only liked it with montreal steak seasoning - medium rare - nothing else. He wasn't even sure he wanted to make it. I had to talk him into it, lol!! He now has TWO favorite ways to make his steak
The only thing we personally will change the next time we make it is, we will add just a hair more parmesean and we'll also add garlic salt. Garlic salt is like a staple around here. When I was first tasting it, I realized that it needed a bit of garlic but garlic salt to be specific cause it needed that little bit of salt taste too. And not much of either or those two - the recipe itself really was delicious!
We ended up making noodles and green beans with it.
I can't wait to make the potatoes!
Terry, you make such awesome sounding things and I really wish I was disciplined enough to create a menu each weel like you. I know you've slacked a bit but I do it the opposite of you. I slack all the time and plan about the same amount of time you slack LMBO!

That sounds sooooooooo good! Ok- It`s on my menu for this weekend at the lake. I can`t wait!
My teen surprised me yesterdy and had dinner in the oven, so my menu didn`t go as planned. He made baked chicken breasts on rolls with lettuce/tomato/mayo, potato pancakes, pears, and peas.
He`s going to be a good hubby for someone one day-lol!

Way to go teen! What a great surprise and sounds yummy too! Try those sandwiches on a kaiser roll w/ ranch dressing That's one of my new favorite sandwiches!
I wanna try that another time w/ italian dressing but I have to find a cool kind of bread. My favorite sandwich from Subway is the chicken breast w/ extra american cheese toasted and then lettuce, tomato, sweet pickles and italian dressing. Oh, and I almost forgot the best part ... on italian herb and cheese bread!

Time to really bring this post back to life. Looks like this post was "BS" The BS in this case stands for Before Shelly (the food & recipe queen) so, I'm sure she'll "bring quite a variety to the table"!
Forgive me while I ramble ... I'm hoping to find someone who's in the same boat as me!!
As usual, I've found myself slipping back into my old ways. So badly that I am unbelievably SICK & TIRED of every single restaurant in the area. I kid you not ... there's not a place around I want to eat at for a very long time. That and I even totally slacked in grocery shopping. Friday night were digging in the cabinets and freezer just trying to find something to throw together for a quick meal and then Saturday morning, we all had very tiny bowls of cereal with just a little bit of milk because there was like NO food in the house. I said, okay, that's it. We're going grocery shopping and we're going to fill this place up!
So, the four of us - usually I would rather just be me but ... I wanted to do kind of like what Terry did. Everyone got to pick out their own meals. Made it so much easier on mom to say the least!
And here's the kicker ... I went against every rule there is when grocery shopping
- There was only two things on my list. Laundry & Dish Detergent. Other than that, there wasn't a single thing listed.
- We left just a bit before lunch time and I wouldn't let anyone eat before we went. (ROFL, am I a mean mom or what?) But it worked! We were all able to come up with some different (for us) and interesting meals!
- I set no budget. This was within reason of course. There was actually a few extra dollars in the account thanks to the stimulus check and I was out to FILL the fridge, freezer and pantry!
- We went up and down every single isle of the grocery part of Walmart. We just browsed and come up with meals along the way. Pick and chose whatever we wanted.
About the only "good" thing I did was I said no pre-packaged meals. I didn't even totally stick with that. I'm too bad at picking up "bagged meals" that you just add the meat or the frozen "encore dinner" (not much different than tv dinners).
Thing with these is ... we end up not liking them in the first place. There's barely enough to feed us in the first place and then no leftovers for hubby (or me) for lunch. We save so much by using leftovers for lunches! And when you really break it down - it's much more expensive than if you just purchased it yourself! So, why did I always bother? Because it was easier - I'm DONE with easier (for the most part anyway, lol ... it's a habit I'm slowly breaking!)
We did buy a little bit of canned fruit. I prefer fresh but too often it doesn't get eaten in time before it goes bad. So, I did get some canned pinapple and fruit cocktail. Other than that, we bought fresh bananas (which I NEVER have to worry about going bad, rofl), strawberries, grapes & apples.
I also did buy some of the packaged noodles (the bagged kind) as well as he rice. We do like those flavors and I'm no sure mom could come up with how to make them herself,
Other than that, we did really well. We bought some bulk meat. For example, we bought a huge container which I was going to break down into a few different meals however, we had unexpected guests last night so hubby threw them all on the grill, lol as well as mac n cheese and green beans. (Oops, that was another we did get a variety of canned, frozen and fresh veggies.)
We bought a large package of small steaks. These will be broken down into kabobs one night and either sandwhiches, wraps or fajiatas another.
Same goes for the chicken.
I bought a very large package of hamburger which will be broken down into quite a few different meals such as hamburgers, BBQ (sloppy joes), spaghetti ... and some will be frozen for later use.
Anyway ... we really did stock up on a lot of things ... came up with quite a few different meals (tuna noodle casserole was another one we'll be doing soon) ... but we did it all for less than $200.00!! THAT is what impressed me the most!
Now through all that ... I want to bring this post back to life! You don't have to go into full detail if you don't want to ... but like I said in the beginning ... you post something that sounds really good, don't be surprised to have someone ask for the recipe! I know I'll be big on doing that, lol! There's quite a few more members here now so this could really be a BIG help to all of us ... any of you that are like me and are tired of the same things ... looking for something new!
You may want to read over the older posts here too! I know I just did and some things have already popped into my head that I want to do again or try! Terry was good for throwing things together in aluminum foil! This is something I'd like to get back into. AND oh I lost the recipe for the Grilled Pesto-Stuffed Steaks! I WILL be heading back to the store soon to get the ingredients for these AND make the changes I mentioned above! For as much as we all loved this ... we only had it once! (HIGHLY recommended!)
So ladies ... won't you join us! We want to know ...

Last night ...
We ended up with some unexpected guests so, we ended up having:
Grilled Pork Chops
(Doesn't get much simpler than this and they're delicious! Simply sprinkle on some McCormics Montreal Steak Seasoning and throw them on the grill.)
Canned Green Beans
Macaroni & Cheese
Oh and we had apple pie for desert. Highly recommended! Marie Calender's Deep Dish Dutch Apple Pie! OMG! It is absolutely DELICIOUS! It does take about an hour and 15 minutes to bake but I'm telling you, I wouldn't be afraid to pass it off as homemade! They use real apples and it is absolutely delicious!
This was all really thrown together at the last minute. They came over to ride 4-wheeler and everyone was getting hungry so that's what we came up with, lol!

Tonight we're having what is actually one of our favorite camp recipes!
Kabobs
Beef (cubed)
Boneless Skinless Chicken Breasts (cubed)
Shrimp
Bacon
Red & Green Peppers
Sweet Vadalia Onions
I'm trying something new tonight though. I'm going to brush the Kabobs with olive oil and garlic salt.
The great thing about Kabobs is - kids love to make their own creations and get to pick and choose what they want. A few other things can be cubed pork chops (which we would have had if we didn't use them all last night, lol) We often use cherry tomatoes but decided against them this time. Shelly here from the boards also recommends brocolli. We also often use mushrooms but we forgot them at the store this time, lol!
Really, you can use whatever your family likes! They're super simple. Simply cut all your meat and veggies, slide them on a Kabob and either brush melted butter (or in this case, olive oil) salt (or garlic salt) and pepper to your liking. Stick them on the grill and cook till their done to your liking
By the way ... if you're using wooden skewers, soak them in water for about 20 minutes before using them. This helps to keep them from catching on fire and helps keep everything from sticking.
We have metal skewers we use for when we're cooking at home so I'll probably brush the skewers with the olive oil before putting on the goodies and after.
Mmm ... Mmm ... Mmm I so cannot wait!

Saturday Night we had guests for dinner so here is what I made:
Baked Manicotti (2 pans full)
Cherry Cobbler (in my crockpot) topped with Vanilla Ice Cream
Hefty Salads (salads loaded with everything)
Sunday Night
I made stuffed green peppers and stuffed tomato's and I made around 30 or so of them...I freeze most of them so we had some for dinner last night.
We also had salads and apple pie ala mode of course!
Monday Night (tonight)
We are having stuffed tomato's, salads and not sure what else. _________________ Shelly
