Roasted Potatoes

1 (1lb) bag red potatoes, 1/4" slices
2 Tbsp. olive oil
1-2 Tbsp. Italian Herb Seasoning Blend
Salt & Pepper to taste

In a Tupperware Thatsa Bowl, coat sliced potatoes with olive oil and Seasoning Blend along with salt & pepper to taste. Place potatoes on a baking sheet lined with the Tupperware (tm) Silicone Wonder Mat and bake for 25-30 minutes at 400 degrees or until golden brown.

Mocha Cappuccino Fudge

3 c. semi-sweet chocolate chips
1 can sweetened condensed milk (14 ounce)
1/4 c. chocolate flavored syrup
1 Tbsp. instant coffee
1/2 tsp. Cinnamon-Vanilla Spice Blend (Tupperware)
Non-stick cooking spray

Place ingredients in a 2 1/2 qt. saucepan over low heat. Stir constantly until chips are melted and mixture is smooth. Remove from heat. Spread in a 9" round pan or a 8" square baking pan that was sprayed with non-stick spray. Cover and chill for 2 hours or until firm and then cut into bite size squares.

Gingerbread Cookies

5-5 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 Tbsp. Cinnamon-Vanilla Spice Blend
2 tsp. ginger
1 tsp. nutmeg
1 c. shortening
1 c. sugar
1 1/4 c. molasses
2 eggs, beaten

Heat oven to 375 degrees. Stir together the flour, baking soda, salt, Cinnamon Vanilla Spice, ginger and nutmeg in the Thatsa (tm) bowl, set aside. Melt shortening in a 2 1/2 qt. saucepan. Cool slightly. Stir in sugar, molasses and eggs with saucy silicone spatula, mix well. Stir in 4 cups of reserved flour mixture, mixing well.

Turn mixture onto floured Simply Perfect Pastry Sheet (tm). Knead in remaining flour mixture by hand. Add a little more flour, if necessary, to make a firm dough. Roll out on lightly floured Pastry Sheet to 1/4" thickness. Cut out with gingerbread-men or holiday shaped cookie cutters. Bake on the Tupperware Silicone Wonder Mat (tm) lined cookie sheet, for medium sized cookies 6-10 minutes.

Make-ahead Gingerbread Cookies: After kneading in flour mixture, place gingerbread dough in a sealed Tupperware bowl and refrigerate. Refrigerated dough will keep for a week; remove from refrigerator 3 hours prior to rolling so it softens and is workable.

Ham & Swiss Appetizer Wheels

1/3 cup Swiss cheese (shredded, plus 1 extra tbsp.)
2 tsp. Chef Series™ Italian Herb Seasoning Blend
(or Ragin’ Cajun Seasoning)
1 pkg. reduced-fat crescent rolls (8 ounce)
6 slices ham (thinly sliced)

Roll out dough in two rectangles on Silicone Wonder™ Mat.
Sprinkle each rectangle with 3 Tbsp. Swiss cheese and 1 tsp.
Seasoning. Lay slices of ham on top of each rectangle. Starting on longer side; roll up each rectangle tightly creating two logs; pinching together seams. Place on cutting board and use a Chef Series™ Utility or Paring Knife to cut eight slices from each log. Bake at 350°F for 11-13 minutes until golden brown.

Bruschetta

1 lb. ................. plum tomato (halved and seeds removed)
3 Tbsp. ............ extra virgin olive oil
3 Tbsp. ............ fresh basil
1 1/2 ................ Chef Series™ Italian Herb Seasoning Blend
3 cloves ........... garlic (peeled and smashed)

In a Quick Chef with blade, blend together basil, smashed
garlic, olive oil, and Seasoning; place in 6-cup Stuffables™
Container. Using The Chopper Machine, chop tomatoes and
add to basil mixture. Fold ingredients together using Saucy
Silicone Spatula. Great topping for Crostini (pg. 23) or Toasted
Pita Crisps (pg. 29).

Recipe Variation: Bruschetta Pasta Salad Chop tomatoes with
other ingredients in Quick Chef. Mixture will become a light
sauce. Toss with three cups cooked pasta; serve chilled or at
room temperature.

Serve-It-Up Tip: Gift Idea! When your garden is overflowing with tomatoes, gather some in a Stuffables™ Container. Attach a copy of the Bruschetta recipe and give to your neighbor.
